Whole onions and miso




4 medium onions
2 teaspoons roasted sesame oil
1 1/2 tablespoons miso
2 tablespoons kuzu

Make 6 shallow cuts in each onion longitudinally.
Coat the bottom of a pot with the sesame oil and place the onions on top. Add water to half cover the onions (2-2 1/2 cups). Purée the miso in a little water and pour over the onions. Bring the water to a boil and then lower the heat and simmer, covered, until the onions are soft (about 40 minutes).
Remove the onions from the pot.
Add the kuzu to the remaining cooking liquid and simmer for a few minutes. Pour the sauce over the onions.
