Rice balls




1 umeboshi plum
2 cups cooked short grain brown rice
2 sheets nori

Halve the plum.
Wet your hands and shape 1 cup of rice into a large ball. Place the ball on a sheet of nori with the rough side facing up.
Make a hole halfway down into the ball and insert a half piece of umeboshi plum. Cover up the hole with the surrounding rice.
Bring one corner of the nori sheet to the centre of the ball and stick down. Bring the three remaining corners to the centre, wetting the nori to make it stick.
Wet your hands and shape the nori around the rice into a ball.
Repeat to make a second ball.
